Favorite Summer Recipe

I didn't get a chance to enter a card in the PaperTreyInk monthly blog hop this month, but I do have an entry for the forum contest there. Since I live in Florida, my favorite summer recipe is a year-round recipe that everyone likes. It's a nice light family meal, and it's a good choice to take to a pot luck or block party.

Taos Salad Toss

Serves 4
2 cups lettuce, shredded
1 15-oz can dark red kidney beans, rinsed and drained
2 medium tomatoes, chopped and drained
1 Tbs mild green chilies, chopped and drained
1/2 cup olives, sliced and drained

1 large avocado
1/2 cup light sour cream
2 Tbs Italian salad dressing
1 tsp. onion, minced
3/4 tsp chili powder
1/4 tsp salt

1/2 cup cheddar cheese, shredded
1/2 cup tortilla chips, coarsely crushed.

Drain lettuce, beans, tomatoes, chilies and olives in a colander. Meanwhile, in food processor blend avocado, sour cream, dressing, onion, chili powder and salt. Pour over salad. Sprinkle cheese on top and rim with crushed tortilla chips. Good with cornbread or more chips.
